Strawberries are in season right now! The other week, I bought a huge 4lb box of berries, when it was on sale at the market. With an abundance of strawberries at hand, I decided to make a spinach and strawberry salad for dinner, topped with a strawberry balsamic vinaigrette. This was my first time making a strawberry vinaigrette, but I think it turned out pretty well. Hubs even went for seconds, impressive for a non-salad eater. I made this salad with baby spinach leaves, sweet grape tomatoes, chopped walnuts and fresh strawberries, quartered, all topped with strawberry balsamic vinaigrette. It was very refreshing and surprisingly, quite filling.
Strawberry Balsamic Vinaigrette
1 c. fresh strawberries
8 T. olive oil
3 T. white balsamic vinegar
1/8 t. kosher salt
Dash of black pepper
Thoroughly wash the strawberries, cut the tops off, then cut the berries into quarters. Add strawberries and all remaining ingredients into a blender. Puree until a smooth consistency is achieved.
